Oatmeal Muffins

Deliciously soft oatmeal muffins with a sweet nutty topping.

Ingredients

2 eggs
2/3 cup brown sugar
1/2 cup oil
1/2 cup buttermilk or sour milk
2/3 cup quick oats
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup flour
1/4 cup brown sugar - topping
1/4 cup chopped nuts - topping
1/4 tsp nutmeg -topping

Instructions

Beat eggs, beat in sugar, oil, and buttermilk. Stir in remaining ingredients just until moistened.

Spoon batter into greased muffin pan, filling about 2/3 full. Sprinkle with topping.

Bake at 400 degrees for 15 to 20 minutes. Makes 12 to 14 muffins. Can be frozen or stored in refrigerator.
