Mediterranean Lemon-Garlic Chicken Bowls

Ingredients

3 bags frozen cauliflower rice
3 pounds chicken thighs or breast
Large cucumber, diced
Red onion, diced
Cherry tomatoes, halved
1/4 cup feta cheese
1/2 cup Greek yogurt
Lemon juice (2 lemons)
5 cloves garlic
Olive oil
Salt and pepper
Dried oregano

Instructions

  • Sauté chicken in a pan with olive oil and chopped garlic until golden brown. Add salt and pepper and dried oregano to taste. Set aside to cool 
  • In the same skillet, sauté cauliflower rice until tender with a squeeze of lemon and salt. Let cool completely. 
  • Whisk together Greek yogurt, lemon juice and oregano. Add water until desired consistency. 
  • Add cooled rice, chicken, veggies and feta to bowl. Top with sauce that is stored separately.
