Mediterranean Lemon-Garlic Chicken Bowls

Ingredients
3 bags frozen cauliflower rice
3 pounds chicken thighs or breast
Large cucumber, diced
Red onion, diced
Cherry tomatoes, halved
1/4 cup feta cheese
1/2 cup Greek yogurt
Lemon juice (2 lemons)
5 cloves garlic
Olive oil
Salt and pepper
Dried oregano
Instructions
Sauté chicken in a pan with olive oil and chopped garlic until golden brown. Add salt and pepper and dried oregano to taste. Set aside to cool
In the same skillet, sauté cauliflower rice until tender with a squeeze of lemon and salt. Let cool completely.
Whisk together Greek yogurt, lemon juice and oregano. Add water until desired consistency.
Add cooled rice, chicken, veggies and feta to bowl. Top with sauce that is stored separately.
