Bake these adorable Easter lamb cakes, a beloved Czech tradition, fluffy and sweet, perfect for celebrating the holiday with family and friends.
1. Separate the egg whites from the yolks. Beat the egg whites with a pinch of salt until stiff peaks form.
2. In another bowl, beat the butter until creamy, then gradually add one yolk at a time.
3. Slowly incorporate the sugar and beat until well combined.
4. Gently fold in the beaten egg whites, being careful not to overmix.
5. Gradually add the flour mixed with baking powder, alternating with each addition.
6. Finally, fold in the lemon zest.
7. Pour about 2/3 of the batter into a greased and floured lamb-shaped mold. This recipe is enough for one large lamb and 2-3 small ones.
8. Bake the lamb cake at 170 degrees Celsius for approximately 45 minutes. For the small lamb cakes, bake for around 20 minutes.
9. After cooling, carefully remove the lamb cakes from the molds.
10. Tie a ribbon around their necks and make eyes using cloves or other small decorations, if desired.
