Easy, tender cinnamon rolls with a rich cinnamon filling and smooth cream cheese icing. A classic recipe that always turns out soft and delicious.

Dough
250 g milk
7 g dry yeast or 21 g fresh yeast
50 g granulated sugar
430 g all-purpose flour
100 g softened butter
1 teaspoon cardamom
A pinch of salt
Filling
100 g very soft butter
80 g brown sugar
15 g ground cinnamon
Icing
125 g cream cheese
4 teaspoons milk
100 g powdered sugar
Instructions
Gently warm the milk. Add the yeast, 1 teaspoon of sugar, and 1 teaspoon of flour. Stir and let the mixture sit in a warm place for about 10 minutes until the yeast becomes active.
Once the starter is active, mix in the softened butter, the remaining sugar, flour, cardamom, and salt. Knead the dough until smooth — about 10 minutes in a stand mixer, or longer if kneading by hand.
Properly kneaded dough should be smooth, shiny, elastic, and slightly sticky.
Cover the bowl with a cloth and let the dough rise in a warm place for about 1 hour.
While the dough is rising, beat the very soft butter briefly, then add the brown sugar and cinnamon. Mix into a smooth paste and set aside.
After 1 hour, the dough should double in size, look airy, and be full of bubbles. If not yet fully risen, let it rest for an additional 20 minutes.
Transfer the dough to a lightly floured surface, knead it a few times, then roll it into a thin rectangle measuring approximately 45×35 cm.
Evenly coat the entire rolled-out dough sheet with the prepared cinnamon filling.
Roll the dough tightly from the longer side to form a log about 35 cm long. Lightly butter a baking dish (approx. 35×25 cm). Cut the log into 15 equal rolls using thread or a sharp knife, and arrange them in the dish. Let them rise for another 30 minutes. Preheat the oven to 190°C (375°F).
Bake for about 20 minutes until the rolls are golden. Let them cool completely. Prepare the glaze by beating the cream cheese, adding the milk and powdered sugar, and mixing until smooth. Spread the glaze over the cooled rolls before serving.
