1. Place yolks in a small bowl and whites in a large bowl. Whisk yolks.
2. Melt chocolate and butter in the water bath until smooth. Set aside to cool.
3. In another small bowl, beat cream until stiff.
4. Add sugar and pinch of salt to whites. Beat whites until stiff.
5. Fold egg yolks into cream. Use a rubber spatula. A few streaks left are alright.
6. Pour lukewarm chocolate mixture into cream yolk. Fold. (Streaks are alright!).
7. Add 1/4 of beaten whites into chocolate mixture. Fold properly.
8. Pour chocolate mixture into egg whites. Fold through gently until incorporated.
9. Divide the mixture between 4 small glasses.
10. Refrigerate for at least 4 hours.
11. When serving, garnish with whipped cream and chocolate shavings. Add little strawberry jam on the top.
