Cottage Cheese Pancakes

Ingredients

2 heaped tbsp cottage cheese
1 heaped tbsp plain flour
2 tbsp oats
1/2 tsp baking powder
1 egg
Zest of 1/2 lemon (optional)
A couple drops of vanilla

Instructions

  1. Add all the ingredients to a blender. Leave sit for five minutes to firm up.
  2. Place one heaped tbsp of pancake batter onto pan and spread into a pancake shape. Cook on low heat.
  3. Serve with berries and maple syrup or honey.
