Break the tofu into chunks, coat in soy sauce then the cornflour and salt n pepper then spray with oil and bake or air fry til crispy.
Fry the minced garlic, ginger until soft and browning then add roughly chopped spring onion, soy sauce, rice vinegar, sugar and lime juice then simmer to reduce.
Toss the crispy tofu, broccoli and nuts in the sauce then serve with quinoa, top with the garnishes then serve and enjoy!
