* in your stand mixer bowl whisk together warm milk, yeast and 1 Tbsp sugar. Loosely cover and allow to sit for 5-10 mins- until frothy and foamy
* Add remaining sugar, the eggs, butter, vanilla, nutmeg, salt and 2 cups(250g) flour. Beat on low speed for 1 minute.
* Scrape down sides of bowl, add remaining flour and beat on med speed until dough comes together and pulls away from sides of bowl.
* If needed add more flour 1 Tbsp at a time until dough pulls away from bowl.**don't add to much flour add you want it to be slightly sticky**
* Knead the dough for 5-7 mins, if it starts to get sticky add more flour 1 tsp at a time. Ending result needs to be smooth and soft yet slightly sticky.
* Lightly grease a bowl, place dough and turn to coat. Cover bowl and let rise until doubled in size (1 1/2-2 hrs)
* Line 1 or 2 baking sheets with parchment paper or a silicone mat.
* Once risen remove cover and punch down dough. Turn onto a slightly floured surface and roll out until the dough is 1/2 in thick
* Cut into donuts using either a donut cutter or 2 different sizes of cookie cutters. Once cut place donuts on one try and holes on the other.
* Loosely cover both trays and show to rest add you heat the oil.
* Using a deep fryer or a large pot heat oil to 375 degrees F. Fry donuts 2-3 at a time to not crowd pan or fryer, also to not change temp to much, for a minute on each side.
* Donut holes will take approx 30 secs to a min to fry.
* Once done lay on wire rack that is sitting on a large baking sheet to drain extra grease.
* Once all donuts are made and on racks whisk together all ingredients for glaze and dip each warm donut. Place back on racks to allow excess glaze to drip off. After about 20 mins the glaze will set.
