* In a small sauce pan add milk and bring to a simmer over med heat, stirring often.
* When it simmers or small bubbles appear around the edges remove from heat and pour into another container and cool for about 10 mins.
* In your mixer bowl add water, yeast and 1 Tbsp of the sugar, stir and let stand 5-10 minutes. (Should be foamy after waiting)
* Add remaining sugar, honey, the warm milk, and 2 cups of the flour.
* With the dough hook attached beat together for a couple minutes, add in melted butter, eggs and salt and beat again.
* Add in an additional flour 1 cup at a time until you've reached the 7 cups and the dough forms and begins to pull away from sides of the bowl. If you need more flour after the 7 cups you can add in more 1 Tbsp at a time until it's no longer sticky
* Let the dough rest for a few mins.
* Once you've let it rest knead dough in the mixer with the dough hook still attached for about 5 mins. Add more flour 1 Tbsp at a time if the dough starts to get sticky while kneading.
* Grease a large bowl with oil or nonstick cooking spray place dough in bowl and turn to coat all of it. Loosely cover the bowl with plastic wrap.
* Let rise for about 45 mins or until doubled in size
* Once risen punch down dough. Turn out of bowl and roll out to about 1/2-1/3 in thick.
* Cut the dough into approx 2 in squares with a pizza cutter
* Line two baking sheets with parchment paper, place dough squares onto trays, spacing evenly.
* Let rolls rise again until doubled, about an hr
* The last few mins of rising time preheat oven to 350 degrees F.
* Bake 7-9 mins then rotate pans, bake an additional 7-9 mins or until lightly golden brown.
* Remove from oven and immediately brush with remaining butter.
* Let cool
