* Line a cooking sheet with parchment paper, set aside
* In a large sauce pan add sugar and water, stir well
* Add corn syrup and cook over med heat, stirring occasionally until it comes to a gentle boil.
* Put a candy thermometer in the pot( in liquid but not touching the bottom)
* Continue stirring occasionally until temp reaches 250 degrees F.
*Add in peanuts, stir constantly until temp reaches 300 degrees F.
* Once temp is reached remove from heat and immediately add in butter, baking soda and vanilla. ( The mixture will foam and change texture)
* Pour onto prepared pan and carefully spread evenly.
* Allow to cool at least an hr
* Break into pieces, store in a air tight container
