Easy, delicious pinto beans made in an Instant Pot.

Ingredients

1 lb rinsed & soaked (overnight) pinto beans
1/4 lb bacon/bacon ends/Ham hock
1 large chopped sweet onion
2 diced tomatoes
2 diced jalapeño peppers
4 cups beef broth (we make from bouillon)
1 tsp garlic powder
2 cloves garlic (or any combination of powder and fresh to taste)
1/2 tsp kosher salt
1/4 tsp Cheyanne pepper
1 heaping tsp chili powder
1 tsp sweet paprika
1 pinch cumin

Instructions

* First, sift & soak the beans. Place beans in a large colander and sift to remove any stones or debris. Rinse well and put them in a large bowl. Cover with 2-3 inches of water and set them aside to soak for at least 8 hours, or overnight.

* The next day. Strain the beans and mix all ingredients into the Instant Pot.

* Cook on high pressure for 75 minutes.
