Add yeast, warm water and sugar to bowl and activate. In stand mixer, with dough hook, add flour, melted butter and salt to activated yeast and mix. Add shredded cheese and herbs to dough and mix until dough is formed.
Set dough in warm spot to rise for one hour.
After dough has risen, knead for one minute and form into 12 balls with holes in them.
Place dough balls into a pan of simmered water with 1/4 cup of baking soda. Remove after 45 seconds and place on parchment lined pan.
Top raw bagels with egg wash. After place remaining cheese on bagels.
Bake 20 minutes at 400F and let cool for 5 minutes before placing on cooling rack.
