Homemade Limoncello

Ingredients

9 organic lemons (essential for best flavor)
1 liter grain alcohol (Everclear or similar — 151 or 190 proof)
1.5 liters water
700 grams (about 3½ cups) white sugar

Instructions

1. Peel lemons (yellow zest only, NO white pith).

2. Place peels in jar. Add grain alcohol.

3. Seal and infuse 20 days.

4. Boil water + sugar. Cool completely.

5. Strain alcohol into sugar water (discard peels).

6. Rinse jar with water and add to mixture.

7. Mix well for 2 minutes.

8. Bottle in glass containers.
