A rich and creamy cheesecake with a zesty lemon flavor and graham cracker crust.

Ingredients

1 cup graham cracker crumbs
3 tbs. butter
2 (8 oz.) pkg. cream cheese, softened
1/2 cup sugar
1 tbs. lemon juice
1 tbs. grated lemon rind
1/2 tsp. vanilla
2 eggs, separated

Instructions

Combine crumbs and butter, press into a 9" springform pan. Bake at 325 F for 10 min.

Combine cream cheese, sugar, juice, rind, and vanilla with mixer at medium speed. Add egg yolks, one at a time.

Fold in stiffly beaten egg whites. Pour over crust.

Bake at 300 F for 45 minutes.
