Chicken and Orzo Soup

Ingredients

2lbs chicken thighs or breast
1 whole sweet onion, diced
5-7 stalks of celery, chopped
5-7 carrots, peeled and diced
48oz Chicken stock or bone broth
3/4 Cup orzo pasta
4-6 Cloves garlic, chopped
3 Tablespoons lemon juice
3 Eggs, scrambled (optional)
Salt and pepper to taste

Instructions

  • If preferred, brown chicken in a pan or flattop and cut into small pieces and reserve for later. 
  • Add oil to large stock pot and sauté onions, garlic, carrots and celery until softened. About 8-10 minutes 
  • Add the chicken stock/broth, and chicken, either cooked or raw. Bring to a boil. 
  • Reduce to a simmer and let go covered for 15 minutes
  • Remove chicken and shred if not using cooked chicken from above. 
  • Add orzo to the pot and let simmer for 10 minutes. 
  • Optional - temper scrambled eggs with 1-2 ladles of broth and then mix into the soup to cook for 5 minutes. 
  • Add lemon juice and any seasonings to taste.
