Chicken and Orzo Soup

Ingredients
2lbs chicken thighs or breast
1 whole sweet onion, diced
5-7 stalks of celery, chopped
5-7 carrots, peeled and diced
48oz Chicken stock or bone broth
3/4 Cup orzo pasta
4-6 Cloves garlic, chopped
3 Tablespoons lemon juice
3 Eggs, scrambled (optional)
Salt and pepper to taste
Instructions
If preferred, brown chicken in a pan or flattop and cut into small pieces and reserve for later.
Add oil to large stock pot and sauté onions, garlic, carrots and celery until softened. About 8-10 minutes
Add the chicken stock/broth, and chicken, either cooked or raw. Bring to a boil.
Reduce to a simmer and let go covered for 15 minutes
Remove chicken and shred if not using cooked chicken from above.
Add orzo to the pot and let simmer for 10 minutes.
Optional - temper scrambled eggs with 1-2 ladles of broth and then mix into the soup to cook for 5 minutes.
Add lemon juice and any seasonings to taste.
